 Seating The Guest
(W: waiter, G: guest)
W: Good evening, sir. Welcome to African Deck!晚上好,先生.歡迎光臨菲菲酒廊!
G: Good evening,. I’d like a table for 4.晚上好,我要一張四人桌。
W: A table for 4, would you come this way, please? Be careful of the steps.
Would you like to sit here?/ How about this table? 一張四人桌,好的。這邊請(qǐng),小心臺(tái)階。坐這里好嗎?
G: It’s fine, thank you. 好的,謝謝。
W: You’re welcome. Sit down, please. I’ll bring the menu, sir. 不客氣,請(qǐng)坐。我去拿菜單

注:1 客人到來(lái),首先要打招呼:Good morning/afternoon/evening,, welcome to African Deck !等等的問(wèn)候語(yǔ),要讓客人感覺(jué)到熱情。
2 若客人未說(shuō)來(lái)客人數(shù),可主動(dòng)問(wèn)詢:How many people do you have?/ How many people are there in your party?(您一行有多少人呢?)等,以便引客入位。
3 引客入座,要走在客人的前方,身體稍側(cè),隨時(shí)注意客人的情況,可提醒:Would you come this way?(這邊請(qǐng))/Follow me, please. Be careful of the steps.(請(qǐng)跟我來(lái),小心臺(tái)階)等
4服務(wù)時(shí)注意要使用正規(guī)的口語(yǔ),對(duì)客人勿說(shuō),ok, hi ,hello 等比較隨意的用語(yǔ)。

Taking Orders

W: What would you like to drink, sir? 先生,您要喝點(diǎn)什么呢?
G: Give me a Scotch. 給我一份蘇格蘭威士忌。
W: Would you like your Scotch straight up(no ice) or on the rocks(with ice), sir?
您想凈飲還是要加冰塊呢,先生?
G Straight up. 凈飲。
W: would you like anything else? 好的,您還要點(diǎn)別的嗎?
G: Give me some peanuts. 來(lái)點(diǎn)花生吧。

注:1 特別注意straight up(凈飲)on the rocks(加冰)這一說(shuō)法。因客人用得較多,一定要能聽(tīng)懂。
2 最后來(lái)一個(gè)確認(rèn)(confirm),以免出錯(cuò)。
3 看到客人引完可問(wèn)Would you like one more beer, sir?/ Would you like another drink, sir?請(qǐng)問(wèn)先生還要來(lái)一杯嗎?
Serving The Familiar

Apologizing 道歉用語(yǔ)
在無(wú)心的情況下,服務(wù)人員冒犯了客人使客人處于不利或?qū)擂蔚奶幘硶r(shí),要馬上采取措施來(lái)補(bǔ)救。補(bǔ)救的第一步就要及時(shí)說(shuō)出一些誠(chéng)懇的道歉用語(yǔ),這樣才可能很快達(dá)到效果。
